Sesame Peanut Noodles

Sesame Peanut Noodles

 Quick, sesame peanut noodle salad (best eaten cold) 

INGREDIENTS

  • 19 oz (550g) of cooked noodles (spaghetti, or rice noodle will work)
  • 1 red bell pepper 
  • 2 green onions
  • 3.5 oz (100g) of peanut butter (smooth or natural)
  • 2 tbsp sesame oil
  • ½ tsp chili powder
  • ¼ garlic powder
  • 1 tbsp soy sauce
  • 2 tbsp lime juice
  • Parsley and sesame seeds to garnish (optional)

HOW TO MAKE IT

  1. Prepare noodles as per preparations instructions listed on packaging
  2. Rinse under cold water once cooked, drain and place aside in clean bowl
  3. Finely slice red pepper into strips; add to bowl with noodles
  4. Finely slice green onion; add to bowl
  5. In a smaller bowl, add peanut butter, sesame oil, soy sauce, chili powder, garlic powder, and lime juice; mix to combine. Mixture will thicken, you can thin out by whisking in some additional hot water if necessary
  6. Add peanut sauce mixture to the noodle bowl; mix until well combined
  7. Optional: garnish with parsley and sesame seeds
  8. Serve on it’s own, or along with a  protein for a complete, balanced meal
