Sesame Peanut Noodles
Quick, sesame peanut noodle salad (best eaten cold)
INGREDIENTS
- 19 oz (550g) of cooked noodles (spaghetti, or rice noodle will work)
- 1 red bell pepper
- 2 green onions
- 3.5 oz (100g) of peanut butter (smooth or natural)
- 2 tbsp sesame oil
- ½ tsp chili powder
- ¼ garlic powder
- 1 tbsp soy sauce
- 2 tbsp lime juice
- Parsley and sesame seeds to garnish (optional)
HOW TO MAKE IT
- Prepare noodles as per preparations instructions listed on packaging
- Rinse under cold water once cooked, drain and place aside in clean bowl
- Finely slice red pepper into strips; add to bowl with noodles
- Finely slice green onion; add to bowl
- In a smaller bowl, add peanut butter, sesame oil, soy sauce, chili powder, garlic powder, and lime juice; mix to combine. Mixture will thicken, you can thin out by whisking in some additional hot water if necessary
- Add peanut sauce mixture to the noodle bowl; mix until well combined
- Optional: garnish with parsley and sesame seeds
- Serve on it’s own, or along with a protein for a complete, balanced meal
