Baby Potatoes With Peas

Baby Potatoes With Peas

Easy, and flavorful baby potato and mashed pea side or main 

INGREDIENTS

  • 1 ¼ lb (570g) of baby potatoes
  • ½ cup of fresh or frozen peas
  • 2 tbsp olive oil
  • Salt and pepper to taste

HOW TO MAKE IT

  1. Wash and clean baby potatoes; cover with water and cook until easily pierced with a fork
  2. Remove potatoes from water; cut in halves
  3. Add fresh or frozen peas to pot of boiling water; simmer until tender
  4. Drain peas; reserve 4 tbsp of cooking liquid
  5. Place peas in clean bowl; add olive oil and reserved cooking liquid; mash peas with for until thick and chunky paste forms
  6. Add mashed peas to bowl with potatoes
  7. Add salt and pepper to taste; mix until well combined
  8. Serve on it’s own, or as a side with a protein
