Baby Potatoes With Peas
Easy, and flavorful baby potato and mashed pea side or main
INGREDIENTS
- 1 ¼ lb (570g) of baby potatoes
- ½ cup of fresh or frozen peas
- 2 tbsp olive oil
- Salt and pepper to taste
HOW TO MAKE IT
- Wash and clean baby potatoes; cover with water and cook until easily pierced with a fork
- Remove potatoes from water; cut in halves
- Add fresh or frozen peas to pot of boiling water; simmer until tender
- Drain peas; reserve 4 tbsp of cooking liquid
- Place peas in clean bowl; add olive oil and reserved cooking liquid; mash peas with for until thick and chunky paste forms
- Add mashed peas to bowl with potatoes
- Add salt and pepper to taste; mix until well combined
- Serve on it’s own, or as a side with a protein
