Tabouli Salad

Fresh, fragrant tabouli salad recipe with parsley, lemon, bulgur wheat 

INGREDIENTS

  • ½ cup of bulgur wheat
  • 1 cup of boiled water
  • 1 tomato
  • ½ cup of chopped parsley
  • ¼ cup of fresh mint
  • 2 green onions
  • ½  lemon
  • ½ tsp nutmeg
  • 2 tbsp olive oil
  • Black pepper to taste

HOW TO MAKE IT

  1. Place bulgur wheat in heat resistant bowl
  2. Add boiled water to bowl, cover and set aside for about 30 minutes; sieve the mixture if necessary to remove excess water
  3. Place cooked bulgur into large, clean bowl
  4. Roughly chop parsley; add to bowl
  5. Roughly chop mint; add to bowl
  6. Roughly chop green onion; add to bowl
  7. Roughly chop green onion; add to bowl
  8. Add salt, lemon juice, black pepper, nutmeg, olive oil and juice of half a lemon
  9. Mix well to combine
  10. Serve on it’s own, or along with a protein for a complete, balanced meal
