Tabouli Salad
Fresh, fragrant tabouli salad recipe with parsley, lemon, bulgur wheat
INGREDIENTS
- ½ cup of bulgur wheat
- 1 cup of boiled water
- 1 tomato
- ½ cup of chopped parsley
- ¼ cup of fresh mint
- 2 green onions
- ½ lemon
- ½ tsp nutmeg
- 2 tbsp olive oil
- Black pepper to taste
HOW TO MAKE IT
- Place bulgur wheat in heat resistant bowl
- Add boiled water to bowl, cover and set aside for about 30 minutes; sieve the mixture if necessary to remove excess water
- Place cooked bulgur into large, clean bowl
- Roughly chop parsley; add to bowl
- Roughly chop mint; add to bowl
- Roughly chop green onion; add to bowl
- Roughly chop green onion; add to bowl
- Add salt, lemon juice, black pepper, nutmeg, olive oil and juice of half a lemon
- Mix well to combine
- Serve on it’s own, or along with a protein for a complete, balanced meal
