Carrot Slaw
A simple, fresh Korean-style carrot slaw
INGREDIENTS
- 1.1 lb (500g) of carrots
- 1 ½ tbsp sugar
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp of red pepper
- ¼ tsp of paprika
- ¼ tsp curry powder
- 2 tsp coriander
- 2 tbsp white vinegar
- 5 tbsp olive oil
- 3-4 cloves of pressed garlic
HOW TO MAKE IT
- Clean and peel raw carrots; grate on shredder into clean, large bowl
- Add salt, sugar, black pepper, red pepper, paprika, curry powder, coriander, white vinegar, olive oil and pressed garlic to shredded beets
- Mix everything until well combined
- Cover and leave in fridge overnight for flavours to permeate through the carrots
