Carrot Slaw

A simple, fresh Korean-style carrot slaw 

INGREDIENTS

  • 1.1 lb (500g) of carrots
  • 1 ½  tbsp sugar
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp of red pepper
  • ¼ tsp of paprika
  • ¼ tsp curry powder
  • 2 tsp coriander
  • 2 tbsp white vinegar
  • 5 tbsp olive oil
  • 3-4 cloves of pressed garlic

HOW TO MAKE IT

  1. Clean and peel raw carrots; grate on shredder into clean, large bowl
  2. Add salt, sugar, black pepper, red pepper, paprika, curry powder, coriander, white vinegar, olive oil and pressed garlic to shredded beets
  3. Mix everything until well combined
  4. Cover and leave in fridge overnight for flavours to permeate through the carrots
