Banana Oat Pancakes
Healthy and delicious banana oat pancake recipe
INGREDIENTS
1 Cup Quick Rolled Oats, Gluten-Free
• ¾ Cups Nut Milk
• 2 Ripe Bananas
• 1 Tbsp. Pure Maple Syrup
• 2 Tbsp. Vegan Chocolate Chips
• 1 ½ Tsp. Baking Powder
• ½ Tsp. Ground Cinnamon
• ¼ Tsp. Sea Salt
HOW TO MAKE IT
- In a blender, add banana and almond milk. Puree for 30 seconds or until thoroughly blended and smooth. Next, add oats, baking powder, and salt and blend again. About 1 minute. Set aside to thicken up.
- After 5 minutes, the batter should be somewhat thick. Add a tablespoon or two of almond milk and blend again.
- Lightly coat a large non-stick skillet or griddle with olive oil and heat over medium.
- Drop batter by ¼ cup onto skillet and gently spread out a bit with a spoon.
- Place 5-6 chocolate chips on top of each pancake and cook until bubbles appear on top, about 2 minutes. Gently flip cakes and cook until golden brown on underside, about 2 minutes.
- Wipe skillet clean and re-oil. Repeat for remaining pancakes.
- Top with fresh fruit and maple syrup.
